☕ Origin & Elevation

Chiapas sits in Mexico’s lush southern highlands. Because the climate is cool and misty, the cherries ripen slowly; as a result, sweetness builds in the bean. Grown 1,200–1,700 MASL, much of this coffee thrives under Mexican yellow pine and native shade trees.

🌿 Farmer Story & Process

These lots come from smallholder Mayan farming communities with a long tradition of stewardship. They use eco-friendly, low-input practices and protect local bird corridors; consequently, habitat for species like the quetzal remains intact. After harvest, the coffee is washed and patio-dried. Because the process is careful and clean, the final cup tastes focused and sweet.
