This coffee is grown in the highlands of Chiapas, Mexico, by native Mayan farmers.
Heights of 1200 msl to 1700 msl in the highlands is where this coffee is grown along with Mexican yellow pine trees.
These small-scale farmers believe that by taking care of the soil, they take care of the entire biosystem.
Their beliefs and sustainable approaches to agriculture benefit their communities in many positive ways.
The coffee crop in Chiapas can be grown in the shade of the forest, maintaining bird habitat, which helps preserve the Quetzal (The Divine Bird).
