This coffee grows in the mountains above Jinotega, the heartland of Nicaragua’s coffee-producing zone. Nestled in lush highland landscape, the farms of SOPPEXCCA sit at 1,200 meters above sea level — high enough for slow cherry development and complex, layered sweetness.
Farmers grow their coffee under a protective canopy of bananas, mangos, and mahogany trees, alongside dense forests that shelter dozens of rare orchids and provide winter habitat for hundreds of migratory songbirds. It’s a farming tradition that’s as good for the land as it is for the cup.

Coffee Processing
After harvest, each cherry is carefully hand-picked, then depulped and fermented overnight before being washed clean and sun-dried. This traditional wet/washed process removes the fruit layer. This allows the natural character of the bean to shine, producing the clarity, floral brightness, and clean sweetness that defines this coffee.
