Ethiopian Guji Origin & Craft
This coffee grows in Ethiopia’s Guji zone at elevations between 1,900 and 2,200 meters. Here, a natural forest canopy shades the coffee trees. The soil, rich sandy clay loam, supports slow cherry development. As a result, sugars deepen and flavors mature fully.
In addition, the coffee is shade grown using traditional agroforestry practices. Native trees remain intact, creating habitat for birds and other wildlife. These methods protect soil health and support biodiversity while contributing to the coffee’s layered sweetness.
During harvest, workers handpick ripe cherries only. After picking, the coffee follows a natural process. Producers sun-dry the cherries on raised beds, turn them regularly, and sort them carefully. This hands-on approach brings forward the coffee’s fruit character while keeping the cup clean and balanced.
