Happy Thanksgiving!

We hope you are having a Happy Thanksgiving and your family is healthy and happy!

With the holidays here and social norms changed we are all finding new ways to stay connected and enjoy our friends and family time. Here at Klekolo we are open regular hours short shifts and juggling so we can all do what we want to.

Me? I will be working at Klekolo in the Morning and then going to dinner with My Boyfriend and his Mother. I made a nice dessert this year a Coffee centric dark chocolate mousse. I am going to share this recipe with you. Judging from my boyfriends reaction I am sure it will be a hit.

Mousse

Dark Chocolate Mousse

To make this you need:

  • 8 ounces high-quality dark chocolate chopped
  • 2 tablespoons unsalted local butter
  • 2 tablespoons freshly brewed Double Chocolate Coffee
  • 1 cup cold local heavy cream
  • 2 large local egg yolks
  • 1 tablespoons sugar in the raw
  • 2 tablespoons reserved freshly brewed  Double Chocolate Coffee or Espresso for a kick
  • extra whipped cream for topping
  • Pomegranate or your choice for garnish
  • Combine chocolate, coffee and butter on low heat  stirring constantly once chocolate is melted and it is smooth put it aside and let it cool.
  • Place cream in the bowl of your electric mixer. Beat until peaks form and you have whipped cream with high peaks. Then put in fridge.
  • Add egg yolks, sugar and the other 2 tablespoons coffee to a pan over medium heat. Whisk constantly until sugar is dissolved, mixture is opaque and light yellow and has thickened coating your spatula.
  • Remove from heat and put saucepan in a bowl of ice water, whisking constantly adding in the cooled melted chocolate mix. Once the whole thing is cool fold in the whipped cream 
  • Once whipped cream is completely folded in, scoop mousse into your container or containers. 
  • Refrigerate for 4 hours. 
  • Top with fresh whipped cream, a sprinkle of cocoa powder and pomegranate seeds!
